combine and minify js and css in magento

Hi,
When i view the source code it shows so many css files and javascript files. I need to reduce the css files or js files. If i combine and minify js and css in magento configuration section, will this GEM theme have any issues?
can i delete some css that i dont need, fro example color.css.

Hi There,
You can’t delete anything CSS because it will have been affecting too many styles on the site. About this problem, you need to hire someone to make sure anything on your site. We can’t support you about this task because of it out of support from us.
