I have made some adjustments to the CSS to better fit the store and it worked fine. However after a week or two all the edits I made to the CSS reset and I had to reapply them. Does anyone have an idea why?

Interesting why it would simply "reset"on you absent any preceding update/upgrade -- be it your core Joomla version, template version or any extensions.
Nevertheless, you may want to consider employing TEMPLATE / LAYOUT OVERRIDES in effort to prevent this from occurring again.

thanks! Seems like it was an issue with the merge CSS feature of Magento. I’ve disabled this and injected my own custom css and it works fine now.
