How can I change the vertical navigation so that you don’t have to click the + to view the drop down menu, but instead shows the drop down if you click anywhere on the bar (including the text)?

The (+) button helps people when click to it show the drop down. If you remove it, when clicking to the category name you won’t be redirected to category page, only shows the drop down.
