If I disable the Products List extension, so no products are listed at all inside the home screen…. I want to remove only the TODAY HIGHTLIGHT part (hopefully the slideshow will stretch and take the extra space?)

To hide the TODAY HIGHLIGHT, please read this block http://www.ubertheme.com/docs/easy-ways-manage-blocks/ and try to add comment to disable block.
