Can orders be processed while migration data?

I have a big store with 350,000 products. I have tested the migration with a copy of the live website and only 20,000 products and it worked but it took several hours to complete. I estimate it will take around 70 hours to complete the full amount of products. I have Memcached installed and working.
I am wondering is it possible to process orders while the migration takes place as we will have to turn off all cron jobs. If this is not possible can we pause the migration and process orders in the day time and then run the migration over a number of nights?

You have to wait until you finish data migration in step #5. And then, you can continue with the data migration in step #6 (migrating customers). 

Once done, you can continue with data migration in step #7.

Also, to reduce the migration time in step #5, #6, #7, you should consider enabling ‘KEEP ORIGINAL IDs’ setting of these steps.
