I’ve been trying to use the setting ‘displaying mega content on…’ to display various aspects on desktop only, as particular aspects don’t look good on mobile but the setting wont work. I’ve tried clearing cache, ensuring I’m using the correct ‘view’ and much more, but despite saving plenty of times I’ve had no success.

Please run following CLI command:
php -f bin/magento cache:flush
And recheck the issue you mentioned.
