Currently my site shows 4 products per column in the category pages.
Questions:
1. How can I show 3 products per column instead of 4 ?
2. If I show 3 products per column, I will also need to increase the size of the image thumbnails to display in the category pages.
How do I increase the thumbnail sizes?

Go to Admin -> Joomlart -> JM BaseTheme -> Find Number of Items per Row , Product Image Height and Product Image Width.
by changing all the values you can achieve the answer for your questions.
Please log into Backend panel, navigate Menu : Joomlart > JM BaseTheme.
Then change settings of fields as in this attachment
