UbThemeHelper allows you to change text only. In order to accomplish your request, you need to edit the code to have it show up as you want.
Please go to the file: app/design/frontend/Ubertheme/atoms/Magento_Theme/templates/html/footer/copyright.phtml at line 34 and make the changes there.
