After running a successful product migration, no entries are populated in catalog_product_entity_text. Further, many other values are missing – such as the product name and the categories. There are no errors that I could see during this process. I have already tried resetting and re-running. How can I resolve this?

It seem you are working on a cloned M1 database? I think you have not cloned M1’s database successfully yet. Lets provide me the URL and phpMyadmin credentials of your source database (M1 database). I will help to check further and get back you then.
